30 Maria cookies
175 g dark chocolate
30 g butter
500 g whole milk
75 g sugar
2 egg yolks
1 teaspoon ground cinnamon
1 tablespoon cocoa powder
1 teaspoon vanilla essence
1 tablespoon cornstarch
Half a glass of cold milk (to dilute the cornstarch).
Preparation:
It has an estimated time of 1 hour and it is recommended to let it stand for 24 hours.
Firstly, heat the whole milk together with the sugar; stir so that the mixture is homogeneous. Then, place the two egg yolks in a bowl and on top of them put the milk and sugar mixture, pour it little by little without stopping beating, the idea is to prevent the egg yolks from curdling.
Again, place it in the saucepan and cook the mixture over low heat, whisk the mixture continuously to avoid lumps, whisk and heat for approximately 10 minutes until it thickens.
Now, add the cinnamon, cocoa and vanilla essence. Separately, dilute the cornstarch in half a glass of milk. Mix everything with a whisk over low heat, the mixture should thicken a little more, and then turn off the stove.
Melt the chocolate with the butter (it can be in the microwave or in a double boiler), make sure it is well blended. Then add it to the mixture, try to make everything homogeneous, you can do it with a spatula.
In a circular or square mold, about 16 cm wide, place baking paper inside.
Now you can start making the cake. To do this, place a base of cookies, then add a layer of the chocolate mixture, covering the entire cookie, and so add another layer of cookie, another layer of chocolate and continue until you finish the ingredients or reach the edge of the mold.
Once finished, leave it in the refrigerator for at least 12 hours, 24 hours is the most recommended. After this time, unmold it and if you like, you can sprinkle a little cocoa powder, powdered sugar or cinnamon on top, whatever you like!
